Does the Sock it to Me Cake Need Icing?
This cake doesn't need icing, but it is delicious with a glaze or a bit of icing. I find a simple powdered sugar glaze is more than enough.
Add homemade cream cheese icing to the cake if you want extra creaminess or flavor. Just cream together some powdered sugar, cream cheese, and a bit of vanilla to create great icing.
If you are in a hurry, you can even add a store-bought icing or glaze to the cake before serving it to guests. It's not at all necessary but it will work well with it if you desire.
Can I Make This Cake and Freeze It?
If you want to make a few of these cakes to have on hand for last-minute guests, you can definitely freeze them. Cook as directed, then wrap the cooled cake in plastic wrap.
Slide the cake inside a large plastic freezer storage bag, and keep it frozen for up to three months.
Make sure to always date and label any item you freeze so it is always easy to find later.
Can I Use Walnuts Instead of Pecans?
While I prefer pecans in this particular case, you can definitely use walnuts instead if those are more readily available or preferred. That is the great thing about both walnuts and pecans - they are easily interchangeable. I find that walnuts offer a bit sweeter flavor when cooked than pecans, so they definitely complement the overall flavors of this cake.
Simply add equal amounts of walnuts in place of the pecans!
