I love Mexican food. Honestly, I could eat Mexican every night of the week and my kids are the same way. So, I have been looking for some great Mexican type dishes to prepare at home.
I mean, I love my local Mexican restaurant but who can afford to eat out all of the time? I am so thrilled to have found this chicken enchilada casserole. It is so easy to make and so delicious and my entire family loves it.
Really, what’s not to love? With chicken breast, tortillas – or lavash bread – cumin, garlic, and a few other yummy spices, this is quickly going to become your favorite Mexican casserole.
It only takes 10 minutes to get this one ready for the oven, and then it takes less than an hour to bake to perfection. You could serve this alongside your other homemade Mexican dishes, like these black bean flautus, or just serve it on its own. It’s delicious either way.
Even if you don’t typically do casseroles, you are going to want to check this one out. It serves eight so it’s great for big gettogethers and if you just have a few people at your house, the leftovers are also great for lunch the next day – assuming you will have leftovers.
This is the easiest and most delicious Mexican casserole that I have ever made, and I am already planning to make it again. Plus, it serves up great with this homemade guacamole.
Chicken Enchilada Casserole

Ingredients:
1 grilled chicken breast
4 sheets of lavash bread (or tortillas)
1 ⅔ cups of water
2 tbsps. of chili flakes
1 tsp. of cumin
1 tsp. of garlic powder
½ tsp. of dried oregano
3 tbsps. of tomato paste
2 cups of shredded cheese
Instructions
1. Preheat your oven to 375 F (190C). Grease a small casserole dish with a little bit of olive oil.
2. Slice chicken breast thinly.
3. You can use store-bought enchilada sauce or make it at home from scratch by combining water with tomato paste and spices, and cooking the sauce over medium-high heat for 5 minutes.
4. Cover the bottom of the pan with a piece of flatbread of choice (tortilla or lavash). Spread enchilada sauce on top, sprinkle sliced chicken and shredded cheese.
5. Repeat all the layers to fill the casserole dish. Cover the top with sauce and leftover cheese.
6. Bake for 25-30 minutes. Let cool down for 10 minutes before slicing.
