I swear my family’s favorite night of the week is whenever we have taco night. We’ve done this for years. Tacos are, after all, one of the best foods in the world, right? Recently, I came across this amazing soup recipe and decided to give it a try.
Without telling my family – to avoid the obvious complaining about a lack of taco night – I made this sweet tortilla soup instead of tacos. They weren’t thrilled at first, but once they tried the soup, they were hooked.
This is honestly the best soup, and it is so very easy to make – it’s a great alternative to taco night, especially during the winter when you want something a bit more like comfort food than traditional tacos.
Making the soup is a cinch. It takes about 15 minutes to get it ready, and then you cook it in the crockpot for three to six hours, depending on how much time you need for other things. This is one of those great recipes that you pretty much set and forget.
Put it all together and then go off and do other things while it cooks. Is it any wonder that the slow cooker is the most popular of all kitchen appliances? Anyway, this tortilla soup has all the basic ingredients of your favorite Mexican food, and it’s made into a delicious soup.
You can serve these zucchini tortillas alongside it for a delicious and healthy addition to your meal.
The soup has chicken, white beans, corn, taco seasoning and of course, avocado and sour cream. The avocado is a must in my house, although you can omit that if you aren’t a fan.
This is the perfect soup for a cold winter night and it’s great for those busy weeknights when you just really don’t have time to spend hours in the kitchen. Plus, it’s absolutely delicious.

Sweet Tortilla Soup
Prep Time: 15 minutes
Cook Time: 2-3 hours high /4-6 hours low
Total time: 2-¾-6 hours 15 minutes

Ingredients:
- 1 chicken breast, minced or chopped finely
- 2 tbsps. of taco seasoning
- 1 ½ tbsps. of tomato puree
- 1 cup of tomato juice
- 2 cups of chicken stock
- 2 cans of white beans
- 1 red onion, chopped
- 1 can of corn
- 3 tbsps. of sugar
- 3 tbsps. of tomato paste
- Chopped avocado, sour cream, greens for serving
Instructions:
1. Dump all of the ingredients into a slow cooker, mix, and cover with a lid.
2. Cook on HIGH for 2-3 hours or on LOW for 4-6 hours.
3. Serve topped with sour cream, avocado and greens.
White beans, corn, and seasonings make this the most delicious Mexican soup you will ever eat.
Just throw everything in the slow cooker, and it cooks itself.
Just a few hours later and you will have a delicious alternative to traditional taco night.
