Salads are seriously one of my favorite foods. I don’t even care what kind of salad it is…I’m going to eat it. Recently, I began trying to cook a bit healthier for my family, so I started looking for healthier alternatives to fried and fatty side dishes. I found three of the most delicious salad recipes, and all of them are so simple to make. If you think that eating healthy has to be tasteless, you haven’t tried these salads yet. There is a great chicken salad, a brown butter tomato salad, and a tomato salad with zucchini and cucumbers.
If you are trying to eat healthier, these salads are the perfect side dish, or they could even count as a great and filling lunch. They’re very low in calories and fat and so super easy to make. Now, if you’re looking for a great pasta-based side salad, I highly recommend this BLT pasta salad. It’s also filled with delicious ingredients and easy to make. If you want a more traditional salad without the pasta, these three delicious and easy-to-make salads are the perfect choice.
Salad is such a great side dish option, and these three delicious salads will complement any main dish that you choose to make. Chicken and Veggie Salad
Prep Time: 15 minutes

Ingredients:
- 1 chicken breast, cooked
- 2 medium cucumbers, deseeded and sliced
- 8-10 cherry tomatoes, sliced in half
- 1 small bell pepper, sliced
- ½ cup of sour cream
- 1 tbsp. of dill, chopped
- 1 tbsp. of mint leaves, chopped
- ½ lemon, zested
Instructions
1. Mix ingredients for the sauce: sour cream, dill, mint, and lemon zest together.
2. Put all the veggies and chicken into a bowl. Add the sauce. Drizzle with some olive oil and season with salt before serving.
Cooked chicken, cucumbers, and cherry tomatoes are the basis for this delicious chicken and veggie salad.

Brown Butter Tomato Salad
Prep Time: 5 minutes
Cook Time: 10 minutes
Total time: 15 minutes
Yield: 4 servings
Serving size: 200 g (7 oz)
Type: Appetizer
Ingredients:
- 6-8 assorted tomatoes, sliced
- ¼ red onion, thinly sliced
- 2-3 basil springs
- 3 tbsps. of butter
- 1 tbsp. of balsamic vinegar
- Salt and pepper to taste
Instructions
1. To make the brown butter dressing, you need to brown your butter over medium-low heat for 5-6 minutes or until it’s brown and has a nutty aroma.
2. Strain brown butter to remove the residue on the bottom of the pan. Whisk strained butter with balsamic vinegar.
3. Place sliced tomatoes on a serving dish, top with thinly sliced onions, season with salt and pepper, and drizzle with brown butter dressing.
Different varieties of tomatoes give this salad a beautiful color.
Brown butter gives the dish an amazing taste.

Tomato, Cucumber and Zucchini Salad
Prep Time: 15 minutes

Ingredients:
- 1 cup of chopped cucumbers
- 1 cup of chopped zucchini
- ⅓ cup of finely chopped red onion
- 1 cup of chopped tomatoes
- ½ cup of black olives, pitted and sliced
- 2 tbsps. of balsamic vinegar
- 2 tbsps. of lemon juice
- ¼ cup of olive oil
- 1 tbsp. of sugar
- Salt to taste
- Basil leaves for serving
Instructions
1. Whisk balsamic vinegar, lemon juice, olive oil, salt and sugar together.
2. Mix prepared vegetables in a salad bowl. Add salad dressing and stir. Top with fresh basil leaves before serving.
Tomatoes, zucchini, and cucumbers give this salad a beautiful color and taste.
Just chop your ingredients and mix them all together.
Black olives bring out the wonderful colors of the salad and add a unique taste.
