When I first made it, my family thought that I had ordered takeout! It’s just that delicious, and it’s really an easy dish to prepare.
In just about 10 minutes, you can have it cooking and then you have about an hour before it’s ready. Use that time to create your sides, or just kick back and relax while it bakes.

Ingredients:
Chicken and potatoes:
- 3-4 chicken thighs
- 10 oz (300 g) of potatoes, peeled and quartered
- 7 oz (200 g) of cremini mushrooms, sliced in half
- 2 tbsps. of olive oil
- 1 tsp. of dried herbs de Provence
- 2 rosemary sprigs
- 2 tsps. of chicken seasoning
Creamy sauce:
- 2 tbsps. of butter
- 2 tbsps. of flour
- 2 garlic cloves, minced
- 2 cups of milk
- ½ cup of parmesan cheese, grated
Instructions
1. Preheat oven to 400 F (200 degrees C).
2. Mix potatoes, mushrooms, olive oil, and herbs together. Season with a generous pinch of salt.
3. Rub chicken thighs with chicken seasoning.
4. For the sauce, melt some butter over medium heat and add flour. Stir to make a smooth paste and pour in milk slowly while constantly whisking.
5. When the sauce starts to boil, add minced garlic and grated cheese. Stir and leave over heat until the sauce thickens.
6. Place potatoes into greased baking pan, top with half of the sauce and layer chicken thighs over. Pour all the leftover sauce in and bake for 50-60 minutes or until cooked through.
Chicken thighs and fresh potatoes make this dish delicious.
