My kids have always eaten deep fried squash and zucchini but when I made this version, they absolutely fell in love. This is the most popular zucchini recipe that I have ever made for them and I love how very easy it is to make.
It takes less than half an hour to make these little zucchini bites, and they are perfectly coated in a crispy outside. The mayonnaise, dill, and garlic sauce give them a wonderful flavor, one that even picky eaters will love.

Zucchini Bites

Ingredients:
1 large zucchini, sliced into ½-inch thick rounds
2 cups of breadcrumbs
2 eggs
1 cup of flour;
Olive oil for frying
½ cup of real mayonnaise
1 tbsp. of dill, chopped
1-2 garlic cloves, minced
Instructions
1. Prepare your dredging station with one bowl of breadcrumbs, one bowl of flour seasoned with a teaspoon of salt, and one bowl with beaten eggs seasoned with salt.
2. Dredge zucchini slices in flour, then dip into beaten eggs and let the excess drip off. Finally, coat all sides of zucchini slice with breadcrumbs.
3. Heat the skillet with vegetable oil over medium heat. Sauté zucchini slices for about 2-3 minutes per side or until golden on the outside and soft on the inside. Lay on paper towels to drain.
4. For the sauce, mix mayonnaise with chopped dill and minced garlic. Serve with warm fried zucchini.
