Every morning when I head out to the gym, I look for a great protein based snack to get me started. I’ve found that peanut butter gives me the best boost of energy and it’s a healthy alternative to those store bought energy bars. That said, I wanted something that I could take along with me to the gym and to work for a great mid-day pick-me-up – just something to curb those hunger pains and maybe give me a little energy to finish up my day. And then I found the recipe for these delicious peanut butter oat bars.
Not only are they approved by my personal trainer – and she’s really strict when it comes to snacks – they are absolutely delicious and my kids really love them. They have just the right amount of protein without having too much sugar and they’re really easy to make. What else could you possibly need in a snack bar? Oh, did I mention that there’s a jam layer? That makes it even better. My kids even eat them for breakfast, which is great when we have busy mornings. Although I prefer to feed them dishes like this spinach bacon frittata, sometimes there’s just not time and these peanut butter oat bars perfectly fill them up and still make me feel as if they’re eating healthy.
Whether you go to the gym or just need something scrumptious to curb hunger pains before lunch or dinner, these bars are quickly going to become your go-to for energy. They take less than an hour to make and with peanut butter, oats and frozen raspberries, you are going to absolutely love their taste. Incidentally, you could substitute frozen strawberries if you prefer them to raspberries or even blackberries. The possibilities are endless! Peanut Butter Oat Bars

Ingredients:
For the bars:
½ cup butter, room temperature;
½ cup sugar;
1 egg;
⅓ cup smooth peanut butter;
¾ cup rolled oats;
1 ¼ cup flour;
½ teaspoon baking powder.
For the jam:
½ cup frozen raspberries, thawed;
2 tablespoon sugar;
1 teaspoon cornstarch;
2 tablespoon water.
Instructions
1. Preheat your oven to 375 F (190 C). Lay 8x8-inch (20x20 cm) baking pan with parchment paper and grease with a little bit of vegetable oil or cooking spray.
2. Cream softened butter with egg and sugar. Add peanut butter and beat again until smooth.
3. In another bowl mix dry ingredients: flour, oats and baking powder.
4. Add dry ingredients to the egg-sugar-butter mixture and stir until crumbly dough forms.
5. For the jam combine raspberries and sugar in a small saucepan over the medium heat. Mash with fork and wait until all of the sugar crystals dissolve. Add cornstarch dissolved in water and leaver over the heat until thick and bubbly. Leave to cool down for 10-15 minutes.
6. Spread ⅔ of the dough over the bottom of prepared baking pan. Cover the dough with raspberry jam and spread leftover crumbly dough over.
7. Bake for 20-25 minutes or until golden. Allow to cool before slicing.
