One-Pot Tomato Tortellini Soup
Prep Time: 10 minutes
Cook Time: 35 minutes

Ingredients:
1 medium white onion, diced
2 tbsps. of olive oil
3 garlic cloves
2 tsps. of dried rosemary
2 tsps. of dried oregano
½ cup of grated parmesan cheese
500 g of canned tomatoes, crushed
¼ cup of tomato paste
1 cup of cream
10 oz. package of cheese tortellini
4 cups of chicken broth
More cheese and fresh greens to serve
Instructions
1. Fry diced onion until translucent. Add garlic and dried herbs. Cook for 30 seconds more.
2. Add the remainder of the ingredients except for the tortellini. Simmer for 20 minutes. Optionally, you can blend for a smoother consistency.
3. Place the cheese tortellini into the soup and cook for 10-12 minutes more until tortellini are tender.
4. Garnish with more cheese and fresh greens of your choice before serving.
