There are so many mornings that I just need to blaze out the door for work or errands, and the last thing I have time to do is make a complicated breakfast. On days like that, I usually just throw something together, eat it in two minutes, and go. They say that breakfast is the most important meal of the day. For me, it’s the most rushed meal of the day! Who has time for a fancy breakfast when you need to run to work? Usually I don’t have time to do more than wake up, grab a banana, and go.
I was very excited a few years ago when I found out a kitchen hack for cooking poached eggs in the microwave. It’s fast and easy, though it’s hard to get the timing just right. But at least it got some protein into my morning routine.
But I had no idea that you can make a lot more than that in the microwave! Then I found this incredible video showing me how I could cook up amazing gourmet breakfasts in just one minute!

I really don’t know which of these recipes looks the most amazing. And they really do seem astoundingly quick and easy. More work than poaching an egg in the microwave? Sure—but worth it. I think I’ve found my favorite new breakfast obsession!
