I absolutely adore donuts, but it’s more of a guilty pleasure than a regular snack since the health factor of those deliciously fried treats is pretty poor. Of course, this means that I don’t get to satisfy my craving nearly as much as I’d like to, so I set out looking for a healthier version and found this fantastically easy and delicious recipe for oven-baked donuts.
Ingredients:
- 1 cup all-purpose flour
- ¾ teaspoon baking powder
- ¾ teaspoon baking soda
- ⅓ cup caster sugar
- 1 teaspoon vanilla extract
- ½ cup low fat vanilla yogurt
- 1 egg
- 250g fresh blueberries
All you really have to do is mix the dry ingredients, mix the wet ingredients in a separate bowl, and then combine the two. Then you just pop them into the oven on 375°F (190°C) for about 10 to 12 minutes and enjoy then while they’re still warm! This may not be the absolute healthiest breakfast or snack in the world, but it certainly is a healthier alternative to the greasy donuts topped with way too much icing sugar that we’re used to. Blueberries have immense health benefits—although feel free to use other berries if you prefer—and thanks to that bit of yogurt, your donuts will remain deliciously moist – there’s nothing worse than a dry donut!
