As if red velvet cakes aren’t luxurious enough, this recipe adds in a gooey center like a lava cake. I like to call it the lavelvet cake! This delicate and decadent cake recipe is actually very easy to follow so you don’t need to be a master in the kitchen in order to enjoy these little wondrous desserts. I also love the deception of it all – when serving these, your guests or family will already be excited to see an individual red velvet cake, but as soon as they break it open to the reveal the surprise lava center, they’ll be over the moon! And you’ll be crowned the dessert queen.

For six individual cakes, you will need:
- 8oz white chocolate
- 2 sticks butter (225g/8oz)
- 1 cup sugar (210g/7½oz)
- 1 cup granulated sugar (200g/7oz)
- 4 large eggs at room temperature
- 4 large egg yolks at room temperature
- 1½-2 tablespoons red liquid food coloring
- ¼ cup natural unsweetened cocoa powder (27g/1oz)
- ½ teaspoon cinnamon
- ¾ cups all-purpose flour (100g/3½oz)
- Confectioner's sugar for dusting
You start off by melting the butter and white chocolate together and letting it cool; then comes the whisking of all the eggs, into which you slowly pour in the sugar. Add in the food coloring and vanilla, and then as you whisk slowly, pour in the butter-chocolate mix. Once the color is evenly distributed, gently fold in the dry ingredients. After greasing up your ramekins or oven-safe mugs, pour out the batter evenly and bake them off in the oven at 375°F (190°C) for about 18 to 22 minutes.
