There is nothing, to me, as good as a homemade chicken salad sandwich. Well, that is, unless it is on a homemade pastry puff! This super simple recipe magically turns my best chicken salad recipe into the most perfect party appetizer ever.
Admittedly, making homemade puff pastry rolls takes a bit of time, but it is well worth your effort.
Serve these with this veggie-loaded easy pasta salad for a complete meal that is healthy and satisfying!
Will Pecans Work Instead of Walnuts?
Sure! If you prefer using pecans in your chicken salad for added crunch, feel free to substitute. Just use the same measurements, and the result will be just as delicious.
I often used these interchangeably in recipes for added protein and texture, but you could even leave these out if you are not a fan of nuts. If you do leave them out, I recommend adding in diced celery for a bit more crunch in the recipe.
What is the Best Mayonnaise for Chicken Salad?
Mayonnaise is a topic that can bring out fights in some people. In my family, Hellman's mayonnaise was the go-to for any and all recipes. For my husband, it was Duke's mayonnaise always. My sister now uses salad dressing, Miracle Whip, instead of mayonnaise.
I believe that real mayonnaise is important for flavor because it has a richness that is sweeter versus being sour, like in Miracle Whip, which has a vinegar base. For this recipe, I would not use a salad dressing spread like Miracle Whip. However, the brand of mayonnaise isn't as important. It has been my experience that most will taste nearly identical.
Can I Serve This Chicken Salad on Regular Bread?
If you don't have time to make homemade puffs for this recipe, you can serve your homemade chicken salad with any bread or cracker.
I like using slider buns or rolls like King's Hawaiian for this type of salad spread. The chicken salad also goes well with any regular white bread, whole wheat bread, or even nice rye or sourdough.
If you are serving with crackers, I prefer using a garden vegetable cracker or a whole grain cracker for texture and flavor, because it is a great compliment to the sweet and sour of the salad.

How to Make Homemade Puffs
Begin by gathering and measuring all of your ingredients.
Preheat your oven to 215ºC or 425ºF. Cover your baking sheet with parchment paper and set aside.
Boil the water, sugar, salt, and butter together. Once it is boiling, you will mix in the flour and stir until it forms a smooth ball.
Let the ball of dough cool before adding the eggs one at a time. Whisk this mixture constantly and fast.
Once the pastry mix is done, you will put this into a pastry bag and make dollops of batter onto the parchment paper.
Bake these for 15 minutes, then remove them from the oven and allow them to cool completely before touching them.
How to Make Homemade Chicken Salad
To make the chicken salad, you will boil and then shred or dice the chicken breasts.
Mix the rest of the ingredients with the chicken until incorporated, then slice open the pastry puffs and add a spoonful of salad inside before serving.

Ingredients
For the puffs:
- ½ cup butter;
- 1 teaspoon salt;
- 4 eggs.
- 1 tablespoon sugar;
- 1 ¼ cups flour;
- 1 cup water;
For the salad:
- 1 chicken bread, boiled, shredded;
- ¼ cup scallions, sliced;
- 3 tablespoon mayonnaise;
- ⅓ cup pickles, chopped;
- 3 tablespoon sour cream;
- ¼ cup walnuts, chopped;
- salt and pepper.
Instructions
- Begin this recipe by making your homemade puff pastry;
- Preheat the oven to 215C or 425F and cover your baking sheet with parchment paper;
- In a saucepan, boil water, sugar, salt, and butter. Once boiling, add in the flour and stir until it forms a smooth ball;

Do I need to make any changes to the pastry recipe for high altitude? Another question, would these pastries be good for sweet recipes as well as savory? I was thinking of making them for desserts as well. I can’t wait to give them a try.
