As an adult, I discovered just how wonderful and healthy fresh asparagus can be when prepared correctly. Fresh, ripe asparagus can be trimmed and roasted, grilled, or even sauteed to bring out the natural nutty flavor. A few simple herbs, or in this case a squeeze of lemon, make flavors pop and create a new side dish favorite you will keep on rotation!

Tips for Trimming Asparagus
Trimming asparagus will make sure you get the best part of each spear. You don't want to eat the very ends where the root of the plant once was. They can be very tough and lacking in flavor. Instead, you want to hold the asparagus spear between your thumb and forefinger and bend until it naturally snaps. This is typically in the lower ⅓ of the spear.

Can You Buy Asparagus in Season and Freeze for Future Use?
Yes! While I mentioned that I do not care for canned asparagus, frozen asparagus can work in a pinch. It is best if you rinse the asparagus well, trim the ends as directed above, then allow the asparagus to dry completely. Next, you will want to lay a single file on a lined baking mat and freeze for one hour. Once they are mostly frozen, take them out of the freezer and place into freezer storage containers. This keeps the individual spears separate and helps prevent freezer burn that can alter the taste.
Just thaw in the refrigerator overnight, or even toss onto a baking sheet frozen and allow for a few extra minutes cook time.
How to Reheat Roasted Asparagus
If you make a large batch of this parmesan asparagus and find you have leftovers, don't fret! Leftover asparagus is easy to reheat. Typically, you think of reheating food in the microwave. While it is possible with this dish, the texture will not be as good.
Instead of microwave oven heating, use your toaster oven or pop the asparagus under the oven broiler. You only need 2-3 minutes at most to heat the asparagus through, and this will maintain the soft inside but crunchy exterior you prefer.
How to use Leftover Asparagus
If you happen to have leftovers of this parmesan asparagus, I recommend dicing and mixing in with eggs and cheese for a tasty omelet the next day! Other options that are excellent for leftover asparagus are listed below for your convenience.

Next, you will mix together the olive oil, garlic powder, lemon juice, parmesan, and a dash of salt and pepper together. Place your cleaned and trimmed asparagus into the bowl with the marinade. Coat the asparagus well before placing on the baking sheet and cooking as directed.
Tip: You can add fresh shaved Parmesan to the asparagus spears as they come out of the oven for a bit more flavor.
