What Kind Of Pasta Should You Use?
I used pasta shells for this recipe, mostly because that’s what I had in the cabinet and partly because with shells, the flavors really stick to the pasta.
If you don’t have shells or would prefer to use something else, I think you could easily substitute penne or tiny tubed shells for this.
How Should Pasta Be Cooked?
Begin cooking your pasta by boiling four quarts of water for each pound of shells that you plan to make. You need about a half a pound with this recipe, so two quarts of water should do.
Once the water boils, add your pasta and boil for about 8 minutes. You can taste the pasta to see if it’s done. My uncle used to say to throw it against the wall, and if it sticks, it’s done.
If it falls off, put it back in the pot and boil it a bit longer…I do not recommend that you use this method. Just taste it. If it’s just a bit firm but not crunchy, then it’s done.
How Do You Make Pasta Shells Not Stick?
To keep the shells from sticking together or to the side of your pan when cooking, make sure that your water is at a full boil before you add the pasta.
Then, be sure that you stir it quite often to break the noodles apart while they are cooking. Just a note, if you are planning to use a sauce with your pasta, like in this recipe, it’s not recommended that you add oil to the water as it will keep the sauce from sticking to the noodles.
Can You Substitute The Blue Cheese?
If you don’t like blue cheese, you can leave it out if you want but make note that the blue cheese is what gives this dish its wonderful flavor.
If you really don’t like the taste of blue cheese, you could substitute with another cheese, but make sure that you choose a cheese that has the same texture in order for the recipe to turn out as it should.
