2 large boneless chicken breasts;
1 egg;
2 tablespoon water;
1 cup panko breadcrumbs;
½ cup flour;
½ cup parmesan cheese;
1 teaspoon dried Italian herbs;
4 tablespoon tomato sauce;
8 slices fresh mozzarella;
olive oil for frying.
Instructions
1. Prepare your dredging station: mix flour with Italian herbs and a pinch of salt, mix breadcrumbs with cheese, and beat one egg with 2 tablespoon of cold water.
2. Cut each chicken breast in half lengthwise, pound to an even thickness, and season with salt and pepper.
3. Dip the chicken into the flour, shaking off any excess, then in egg and finally in panko. Brown chicken in preheated olive oil over the high heat for 1-2 minutes on each side, top with two slices of mozzarella.
4. Bake at 375 F (190 C) for 10-12 minutes or until cheese is melted and chicken is done.
